Nordic Plate works to promote and improve the quality of cooking and eating practices in Nordic public kitchens.

If we enhance and advocate a good* food and eating culture we can sustain the Nordic society and our welfare model. And the world will actually become a better place.

By exploring new and old skills, cooking techniques and menus. By training and educating people in cooking, care and education, from kindergartens and schools to hospitals and retirement homes, these goals can be reached.

The vision for Nordic Plate, is public food based on the values of The Nordic Kitchen Manifesto.

We aim to make the vision an essential for our public kitchens and therefore give people access to tasty, healthy, sustainable, organic meals from birth to grave.

Nordic Plate will collect evidence and research on the positive effects of good* public meals, to help stakeholders and leaders mandate good* food for public meals.

Food on the Nordic Plate doesn’t just taste better. We’ve also learned it makes people more content and  happy. Both the people cooking the food and the people eating it.

A Nordic Plate cooked following the Nordic Kitchen Manifesto is also a healthier and sustainable option, both for the person eating the food and for mother nature.

We are so lucky to live in the Nordic countries. Our greatest asset is what nature offers. Foraging is part of the Nordic lifestyle. There are many creative ways of cooking and serving a Nordic Plate when you tap into this knowledge and put it in to practice in your own backyard.

This platform will give you ideas on how to use our lifestyle as an asset for improving your public meals. Cooking food from scratch instead of the pre-fab or highly industrialized food generally on offer.

MANIFESTO FOR THE NORDIC PUBLIC KITCHEN

The values of the New Nordic Kitchen are:

1) To express the purity, freshness, simplicity and ethics we wish to associate to our region.

2) To reflect the changes of the seasons in the meal we make.

3) To base our cooking on ingredients and produce whose characteristics are unique in our climates, lanscapes and waters.

4) To combine the demand for good taste with modern knowledge of health and well-being.

5) To promote Nordic products and the variety of Nordic producers – and to spread the word about their underlying cultures.

6) To promote animal welfare and a sound production process in our seas, on our farmland and in the wild.

7) To develop potentially new applications of traditional Nordic food products.

8) To combine the best in Nordic cookery and culinary traditions with impulses from abroad.

9) To combine local self-suffiency with regional sharing of high-quality products.

10) To join forces with consumer representatives, other cooking craftsmen, agriculture, fishing, food, retail and wholesales

industries, researchers, teachers, politicians and authorities on this project for the benefit and advantage of everyone in the Nordic countries.

The purpose of Nordic Plate is to improve the quality of the food and the professionalism in the public meals sector – starting from everyday life and everyday meals. Nordic Plate is the plattform to initiate knowledge transfer at different levels in the Nordic food system, so that different working groups within the public meals arena can inspire each other in future best practices. CONTACT NORDIC PLATE

The Copenhagen House of Food in Denmark is at the moment the hub for Nordic Plate and Kenneth Højgaard is the contact person. The Copenhagen House of Food serves as a vehicle for change, facilitating projects, providing consultancy, courses, supplementary training, communicating and much more – all in the area of public meals. There large network have a wide range of expertise – all willing to help improve the quality of Nordic public meals.
